Pakatli Puri/Chirote
Ingredients:
Maida - 2 cups
Curd - 1 cup
1 spoon baking soda
Oil -2 spoons
Sugar - 1 1/2 cup
Cardamom powder - 1/2 spoon
Rice flour - 1/2 cup
Ghee - 1 - 1/2 cup
Recipe:
1. Take a maida, add soda, curd, 2 spoons warm oil and mix it to make a dough. Consistency of the dough should be same as we prepare for puri. Let it rest for 15 minutes before preparation.
2. Take a handful of dough and roll it like a chapati but should be thin, make as many as possible around 9.
3. Take a half cup ghee, add rice flour, mix it.
4. Now take a rolled chapati and apply ghee- rice mixture and place another chapati, continue it for all 9.
5. Once done roll it like wrap and make the pieces.
6. Take a each piece roll it like puri(mostly the shape will be little square).
7. Take a pan, heat the ghee, fry each puri.
8. Take a pan, heat water and add sugar to make a sugar syrup , add cardamom powder, consistency of the sugar syrup will be similar to what we prepare for Gulab Jamun.
9. Fry each puri and add it to sugar syrup. Dip and take it out after a minute.
